Banana Oat Snack Cookies

Mashed ripe bananas bind rolled oats and a touch of vanilla into soft, chewy cookies that require no flour or added sugar.

What you need

The easy way

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix the mashed banana, vanilla extract, maple syrup, and salt until smooth.
  3. Stir in the rolled oats, cinnamon, walnuts, and chocolate chips until fully combined.
  4. Scoop tablespoon-sized portions onto the prepared baking sheet and flatten slightly with the back of a spoon.
  5. Bake for 12-15 minutes until the edges are lightly golden and the centers feel set.
  6. Cool on the baking sheet for 5 minutes before transferring to a wire rack; store in an airtight container at room temperature for up to 3 days.
