No-Bake Carrot Cake Bites
Grated carrots, oats, and spices are bound with dates and coconut oil to create dense, sweet bites that mimic the flavor of carrot cake without baking.

What you need
The easy way
- Line a small loaf pan with parchment paper and set aside.
- In a food processor, pulse the oats until they resemble coarse flour; add dates, almond butter, maple syrup, cinnamon, and nutmeg, pulsing until sticky.
- Transfer to a bowl and stir in the grated carrots and shredded coconut by hand.
- Press the mixture firmly into the prepared pan, smoothing the top evenly.
- Refrigerate for at least 1 hour to firm up before cutting.
- Cut into 12 squares and store in an airtight container in the refrigerator for up to 5 days.
