The easy way
- Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease lightly with cooking spray.
- In a large bowl, whisk together the flour, rolled oats, baking powder, and salt until well combined.
- In a separate medium bowl, whisk the Greek yogurt, honey, egg, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and fold gently with a spatula just until combined; do not overmix. Fold in the blueberries carefully to prevent them from breaking.
- Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.
- Bake for 20-25 minutes until the tops are golden and a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack. Store leftovers in an airtight container at room temperature for up to two days or refrigerate for up to five days.
