What you need
The easy way
- Preheat the oven to 350°F (175°C) and lightly grease a 24-cup mini muffin tin.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In a large bowl, mash the banana with a fork, then whisk in the applesauce, eggs, and vegetable oil until smooth.
- Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the grated carrot and walnuts if using.
- Divide the batter evenly among the 24 mini muffin cups.
- Bake for 10-12 minutes until the tops are lightly golden and a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack. Store in an airtight container in the refrigerator for up to four days.
