Parmesan Cod with Tomatoes

Tender cod fillets are nestled in a rich tomato sauce and topped with melted cheese for a comforting, low-effort dinner.

What you need

The easy way

  1. Preheat oven to 375°F (190°C). Heat olive oil in an oven-safe skillet over medium heat and sauté garlic for one minute.
  2. Add crushed tomatoes, oregano, salt, and pepper; simmer for 5 minutes until slightly thickened.
  3. Place cod fillets on top of the tomato sauce, sprinkle generously with Parmesan cheese, and transfer to the oven.
  4. Bake for 15-20 minutes until the fish is opaque and flakes easily with a fork and the cheese is bubbly.
  5. Garnish with fresh basil; store leftovers in the refrigerator for up to 3 days.
