Egg Salad Spinach Roll-Ups
Creamy egg salad with fresh spinach is easy to prepare ahead and holds up well in the lunchbox.

- In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, black pepper, and salt until well mixed.
- Lay the tortillas flat and spread the egg salad evenly over each, leaving a 1-inch border.
- Layer the fresh spinach leaves on top of the egg salad.
- Roll each tortilla tightly from the bottom up, ensuring the filling is compact.
- Wrap each roll in parchment paper and refrigerate for 15 minutes to set before slicing into pinwheels or halves.
- Pack with an ice pack if serving cold; consume within 4 hours of preparation.
