- In a small bowl, whisk together the mayonnaise (or yogurt), Dijon mustard, and black pepper until smooth.
- Lay the tortillas flat on a clean surface and spread the mixture evenly over both, leaving a 1-inch border at the edges.
- Layer the turkey slices over the spread, followed by an even distribution of shredded cheddar cheese.
- Arrange the apple slices in a single layer across the center of each tortilla.
- Tightly roll each tortilla into a log, wrap securely in plastic wrap, and refrigerate for at least 30 minutes to firm up before slicing.
- Remove from refrigerator, unwrap, and slice into 1-inch pinwheels; pack with an ice pack if serving cold.
