What you need
The easy way
- Dredge chicken cutlets in flour seasoned with salt and pepper; heat olive oil in a large skillet over medium-high heat.
- Cook chicken for 3-4 minutes per side until golden and cooked through (165°F); remove to a plate.
- In the same pan, melt butter; add green beans and 2 tbsp water; cover and cook for 3 minutes until tender-crisp.
- Remove green beans; add broth and lemon juice to the pan, scraping up browned bits.
- Stir in capers and simmer for 1 minute; return chicken and green beans to the pan to coat with sauce.
- Garnish with parsley and serve immediately; refrigerate leftovers within two hours.
