Banana Oat Cottage Cheese Pancakes

  1. Blend banana, eggs, cottage cheese, oats, cinnamon and vanilla until smooth.
  2. Rest the batter for 2 minutes. Lightly grease a nonstick skillet over medium-low heat.
  3. Cook small pancakes in batches, approximately 2–3 minutes on the first side, until the edges set.
  4. Flip carefully; cook approximately 1–2 minutes more, until the centers are cooked through. Check the egg-containing batter reaches 160°F.
  5. Serve with fruit. For later, refrigerate promptly and pack cold; reheat leftovers to 165°F.
