Spinach, Feta & Green Onion Quiche Muffins

What you need
The easy way
- Heat oven to 350°F. Grease a standard 12-cup muffin tin well.
- Wilt spinach with a splash of water in the microwave, 45–60 seconds. Cool, squeeze dry and chop.
- Whisk or blend eggs, cottage cheese and garlic powder. Add a little salt if needed.
- Divide spinach, feta, onions and optional dill among cups. Add egg mixture; stir gently. Fill about ¾ full.
- Bake 20–28 minutes, until set and 160°F in the center. Rest 5 minutes, then remove.
